P2000 is more in line with GTX 1050ti or 1060. Also, th P series is more of for workstations so unless you can step up to the P6000, my recommendation would be to go with a GTX 1080ti and a Datapath FX4 to get 1 UI + 6 displays. The fact you're hitting 30-40 FPS with virtual monitors makes me think the 2000 series quadros are not up to handling 6 outputs. Because thats when it drops down too much, when you enable outputs.
