Noob Drummer questions about triggering & multiple outputs

Please be gentle with me because I am both a noob AND a drummer
My solo project consists of me recording video and audio of myself playing instruments
I synch them up and want to be able to trigger the parts in real time from an SPDS
I tried using a Roland P-10 but there was a half beat of latency and they only provide a stereo output
I would like to have an isolated audio track for each instrument/sample to send to the board instead of a stereo mix (bass, guitar, audio from a sample/loop/phrase etc...)
I have been told that Ableton Live will do what I want but I want to check out all of my options
So far, my neanderthal drummer brain can understand the concept of triggering but I need to know if you can send the audio for each sample through its' own isolated track
