I'm having a few different issues but they're all related to trying to get DXVs exported through the encoder.

The first problem I'm having is that the files are being exported as .movs, not DXV
How do I get these programs to export in DXV?

(this only applies if I have to use .movs) The second problem I'm having is that some of the clips I exported is showing up as being half Gb, while other files of the same length are much smaller. I did both of these exports about a day apart and as far as I can tell I didn't do anything different between the two. They look identical when I look at their properties in every way except their size.
If I have to use movs in stead of DXVs, then how do I get these to export in a proper size?

.mov is a container, DXV is a codec.

DXV files are LARGE, Very Large. The benefit of them being so large is that they do not have to be decompressed by your hardware, thus making them very fast to playback (which is what we want as VJ's).
So you can't have it both ways, either it's large and plays back very fast (allowing your hardware to focus on more things like fx) or your files will be smaller (like a mp4) and then your hardware will spend more time decoding the file and won't have as many resources available to do all the fun things VJ's like to do.

So I had it backwards? Thanks, good to know! So why do they still show up as MOVs?

.mov is the container. That is what is shown in your OS. DXV is the codec that the container uses. ProRes is also a .mov and you wouldn't expect to see a .prores file in your OS.
If you look at the picture in this document (At the top) you can see that the filename uses .mov but the Codec is DXV3:
