Is there a way to assign a midi button to the equivalent of a right click/reset for a parameter? Or am I missing something obvious?

Using a translator like Chataigne should be able to make that happen. (Making a MIDI button right click)

You can duplicate a shortcut, then you can set a value which the shortcut should set the parameter to: https://resolume.com/support/en/midi-shortcuts#value
You can use the same midi note on multiple parameters /shortcuts too, so you can make 1 button on your controller (re)set multiple parameters with one push.
