what resolution to use

Normaly i use 800x600 as resolution for the second monitor (video projection), but i never understand very well what are the diferenses of the diferent resolutions. If i use 640x480 the processing of the video will be faster? What i won if i use higher resolutions?
It's possivel to use 720x576 (pal) with NVIDIA graphic cards?
