I was just looking at the Arena demo as i'm considering it for a permanent installation and I'm a bit confused as to why DMX mapping only appears for composition but not for application while osc is vice-versa?

Application DMX is fixed, and can be activated by enabling 'DMX auto map' in the DMX preferences. This is to make it easier for LDs to use Resolume from a fixture library. If you want to make your own custom DMX map, you can use the comp mapping.
Composition OSC does not exist, since every existing (and non existing) UI element can already be addressed via a fixed OSC address. If you want to have a different OSC mapping per composition, just create different layouts in your OSC controller.
