mapping generaly involves deformation of an image, where as masking involves just showing part of an image on a surface.

Ok, masking != mapping ,another thing I learned.
I know resolume can map with photoshop, but is there a way to use 1 projector for multiple little screens with the same video?

sure. duplicate the video inside Avenue and map them to your needs with one of the keystone effects. using some effect like "video wall" additionally would give you more little screens. of course without the ability to map those furthermore.
