DIY server help

Hi guys,

Currently doing research for a uni project and was hoping to get some help from you guys. I'm looking for a DIY/Cheapish option to run a media server for a 9-week public indoor installation. I'm just looking for suggestions put me in the right direction but note some of these requirements are awkward to make the task more difficult. So we have:

3 wall projectors 1920 x 1200, 0.6-0.8:1 lens throw
2 floor projectors 1920 x 1080, 0.8:1 lens throw
1 GUI for the server
All projectors must have a HDMI input
Preview screens for all the projectors in the server room
Interactive triggers will be installed into the system and be received by the media server via MIDI/OSC
Sound will be coming from the media server via XLR
Floor and wall projectors will be playing separate content and won't be linked

From what I have looked into so far:
A pc with two quadro cards and a quadro sync card? looks expensive
A workstation or consumer GPU: maybe an A4000 or a 3070? with two data paths? data paths again look expensive and I'm unsure on what GPU will be ideal for the load
Two consumer GPUs could bring the cost down a lot?

Again, this is a DIY option so there can be limitations with the media server and everything doesn't necessarily have to be perfect but just looking for an option that can be cheap but meet most of the requirements.
