Well,
I used both capture card you told about: easycap and the 4 channel (even if it can be used just one of them) and I had no problem. Windows XP and Vista. You just need to properly install proper drivers.
I haven't tried on Windows7.

on a Windows laptop I've used also very cheap video capture usb cards. Chinese Stuff, they're all the same, also 12€. No problem. 640x480, stable, good response , minimum delay.
The very same card on a Macbook Pro didn't work.
