I currently have two projectors set up side by side hooked up to my pc in my workshop. Would i be able to use resolume to edge blend the two projector in order to achieve a 16:9 aspect ratio, and output a movie file to full screen? If so how would this be achieved?

Yes, Resolume Arena can do it very easily.
You should have two video outputs or make use of a Matrox TH2G or a DH2G.
Set your composition and load your full size movie.
You will need two slices that will have some part overlayed. Turn on edge blending for both slices.
On transform, move, adjust slices points to better fit blending and mapping area.
