So I am building a Dell Precision 15 7510
Getting the i7 6820 2.7ghz
Do I want to double the 8gb memory to 16gb (4x4 or 2x8) cost 101.21
Or double the 2gb nvidia m1000 to the m2000 4gb cost 120.72
I want to run at least 4 separate projectors in the future and the laptop only has 2 video outs so it will have to be done with some kind of splitter.
Please help as they cost about the same for each option

I would definitely "splurge" and get both!
16GB of RAM is definitely nice to have if you are going to do any kind of RAM intensive work such as Photoshop or After Effect. It's not a whole lot but much better than having just 8GB.
Having 4GB of VRAM will be nice to have as you start pushing larger resolutions such as 4K into a video splitter/processor (Datapath X4/Fx4, Matrox double or triple heads) to get a total of 4 outputs. And you might even be able to use a DisplayPort MST Hub to get your four independent outputs at a lesser cost.

Would something like a display port mst better utilize the 16gb ram than the 4gb vram. 2gb vram is still way more than I am used to buy so I 8gb ram.

The DP MST Hub will not be using your RAM. These days, having 4GB of VRAM is pretty much the baseline for any mid-level projection project.
Also, check to make sure that the Nvidia mGPU is compatible with an MST Hub.

The only other option is the 2gb AMD firepro . So I think nvidia is it. But I cannot get both. Looking like 4gb vram is the solution. Thank You

If you have to choose one then yes do the GPU since you can always upgrade your RAM at a later date. Also I would choose Nvidia over AMD any day especially if you're going to be using Resolume.
