I monitor my cams with small lcd screens. Actually, portable dvd players. I split the outputs and run one into screen, and one into tv capture card. Read above post as to why i don't use dv in, and switched to capture cards...
This multiple lcd screen method works great for monitoring which camera to use.

Re keeping camera working: Panasonic and Sony cams won't switch off if they are in their still picture mode (ie using SD Card or Memory Stick).
Re keeping firewire cable attached: put the camera on a tripod, and attach the power and firewire cables to the tripod with gaffer tape.
Finally, whenever feasible, I run an analog feed from the camera straight into the mixer (in addition to the FW), so I have something to play with even if the computer goes down. Live cam into a Korg Entrancer keeps people happily entertained for quite a while.
I haven't lost a DV cam yet in the course of several 8 hour gigs (though naturally I'm sure it will happen eventually).
