If that's the case then surely I would be better off getting a more powerful Primary card like a GTX780 and something like a GTX750 as a secondary card just for the additional outputs. Although technically a Double Head and Triple head to go would be the best way I am then using all possible outputs ...

Same GPU's just different memory as the 4Gb card may be pushing more pixels than the 2Gb card. This is due to another output being used in the future if we go ahead and install a capture card.
